Well they are rubbery by nature..but if you let them simmer long enough in the stew, they become quite soft and easy to chew. I guess gizzards fall into the "aquired taste" category...at first they don't seem amazing.

Made a stew of chicken gizzards and hearts the other day...one of my best stews ever. With mashed potatoes as a side. Chapeaux!!
