We have rarely had a left footed CB anyway, that isn't an issue.
At least in comparison to lack of leadership and experience in defense. And not sure why you would want only Alba as LB?

I would keep Digne as Albas back up and then we'd have midfield depth of Iniesta, Rakitic and Gomes. Yes please. Not sure Id even bring back Deulo. Dembele would be the every day starter and Vidal can back him up along with backing up the new RB.
Also if we did switch to this formation would it be better to have a more defensive RB and Demebele would be able to provide necessary width that we were lacking this year?

No, Alba with another LB but I didn't have a name and I think Digne will leave. Also Busquets with another DM back up, maybe Samper.
Then no need to bring Deulofeu back and play Dembele there since he is a versatile player. He can play AM/LW, wide midfielder and maybe RW.

Not a fan of the 4-2-3-1 for Barca, but that looks good. Except Deulofeu can't start for us there. So it's a better player there instead of him, and that's Dembele with Messi playing a clear no10 role.
So you'd have Dembele taking 80% of the minutes on RW, with maybe Paco a sub in the lesser games.
We'd get slaughtered defensively. Dembele-Messi-Neymar AND Suarez with only 2 midfielders? Might work against weak teams at home but its not a sustainable situation.
Works for Juventus with

Defense workrate that do Cuadrado and Mandzukic are far from Dembele? and Neymar.
The only reason the 4-2-3-1 is being considered is because it allows Messi to play behind Suarez while still having a winger to cover the right flank. There is no way we play Rakitic there.
They won't need to have as much defense work rate since they are better attackers.
The defensive work rate they lack (compared to Mandzu and Cuads) will be compensated by attacking output.
Dembele is quite good defensively though. He helps his RB quite a lot
